CANDLEMAS

Pancake time.
The chef gives you his recipe.

Pancakes flambéed in Grand Marnier

Ingredients (serves 6):

  • 250g flour
  • 3 eggs
  • 3 spoons of sugar
  • 2 spoons of neutral oil
  • 500ml milk
  • 1 pinch of salt
  • 4 spoons of Grand Marnier

To sprinkle over the pancakes :

  • 6 sugar cubes
  • a little water
  • a knob of butter
  • 2 large glasses of Grand Marnier
  • zest of one orange

In a bowl, mix the flour, sugar and salt. Add the eggs and then the oil. Dilute by gradually adding the cold milk. Leave the mixture to rest for an hour in a cool place. Just before you cook the pancakes, add the Grand Marnier.
Lightly oil a pancake pan. The thinner the layer of mix, the thinner and lighter the pancake. Fold the pancakes in four on a stainless steel platter.
In a saucepan, heat the sugar, water, orange zest, butter and Grand Marnier. Sprinkle the pancakes with the contents of the saucepan and set light to it.
